Lucuma is an exotic fruit from the Sapotaceae family. Mainly grown in the Andes, it is found in Peru, Ecuador and Chile. The Lucuma tree can be up to 15 metres tall, and grows in high-altitude regions with a temperate climate and low humidity.

A single tree can produce up to 500 fruits a year. The fruit is fairly spherical in shape, with a smooth green skin that becomes increasingly yellow as it ripens. The pulp is yellow-orange, firm and deliciously sweet.

The fruit generally contains one large, smooth brown stone, but in exceptional cases may contain up to 5. The fruit is traditionally eaten raw, but as it is easily damaged, it is sometimes easier to eat it in powder form, in yoghurts, biscuits, desserts, etc. Lucuma ice cream is also very popular in Peru.

Nicknamed the Gold of the Incas, Lucuma has been eaten for a very long time in its native region. It was only very recently that it was discovered elsewhere, and it is now appreciated as a superfood throughout the world.
