Production process
The almonds are first blanched (the skin is removed), then cold-pressed (sweet almond carrier oil is obtained at the same time). The de-oiled almonds are then finely ground, and the powder obtained is mechanically sieved to concentrate the protein content.

Native to Asia, the sweet almond is a nut from the almond tree, a member of the Rosaceae family. The tree's flowers are white and pinkish, and are unusual because they flower before the end of winter, from January to March, making almond trees among the first to flower.
The fruit of this tree is made up of three parts: the shell and the stone. The shell is green and the skin is velvety and soft, like that of a peach, but inedible. The shell is oval, brown and hard; and the "kernels" or "seeds" are almonds as we know them, covered with a thin brown skin and white inside: it is this part that we eat when it comes to the dulcis variety.
There are two main varieties of almond: sweet (Prunus amygdalus var. dulcis) and bitter (Prunus amygdalus var. amara). The latter is the fruit of the wild almond tree, and has a much more bitter taste than the former. It is not suitable for consumption because of its toxic cyanogenic glycoside content.
The sweet almond, on the other hand, has a much milder taste and is widely used in food. They are a highly nutritious source of unsaturated fatty acids, proteins, vitamins and essential minerals, among other things. It is these wonderful sweet almonds that are used to obtain organic almond protein.

To obtain classic almond powder, the almonds are simply blanched and then ground. Almond protein powder is obtained from de-oiled almonds, after the carrier oil has been extracted by cold pressing. This de-oiled almond powder is then mechanically concentrated by fine sieving, without the use of chemicals or solvents, to obtain a minimum protein content of 50%.
ANSES recommends a daily protein intake of around 0.83 g/kg for a healthy adult. As an example, this represents around 50 g of protein/day for a 60 kg person. However, this value may vary according to age, physical condition or situation.
