Brewer's yeast, or Saccharomyces cerevisiae, is the common name for a strain of micro-organisms used to make beer by fermenting cereal sugars. These microscopic fungi are found naturally on cereals, fruit, vegetables and soil, and have been used for thousands of years to make fermented drinks. Brewer's yeast can be dried into flakes or powder, which are popular as a natural food supplement or health food.
Rich in proteins, amino acids, vitamins (especially from the B group) and minerals, brewer's yeast is particularly interesting from a nutritional standpoint. It is traditionally recommended for promoting strong, beautiful hair and strengthening weak or brittle nails. Brewer's yeast is also a natural source of B vitamins, particularly for vegetarians and vegans.
Active or inactive brewer's yeast?
Brewer's yeast can be offered in active or "revivifiable" form, meaning that the yeasts are still alive and can be reactivated with water. Once they are rehydrated, they then regain their ability to ferment sugars. This 'living' brewer's yeast is simply dehydrated at a temperature below 40°C. It can be used as a food supplement for its probiotic effects on the intestinal flora. However, some people are sensitive to it and experience bloating or flatulence.
Brewer's yeast is also found in inactive form, meaning that the micro-organisms have been deactivated. This happens when they are heated above 40°C during the drying process. This 'inactive' brewer's yeast is favoured as a food supplement to strengthen hair and nails. It retains all the nutritional richness of brewer's yeast while avoiding the risk of intestinal discomfort.
