Method of production
Anthocyanin pigments from black elderberries, extracted with a mixture of water and ethanol (vegetable alcohol) and placed on a modified starch carrier with the addition of citric acid. The high-tech process used to coat this dye produces an anthocyanin-based pigment that is easily dispersible in oil and has optimal light stability (whereas anthocyanins are usually rather insoluble in oil and not very stable in light).
