Xanthan Gum

This naturally sourced gelling agent can be used to make beautiful, perfectly transparent aqueous gels. We offer it in a "granulated" grade for optimal dispersion and very easy preparation without lumps, even when cold. At low doses (0.2-0.3%), xanthan gum is used to increase the stability of emulsions. It will give preparations a very pleasant smoothness while slightly increasing their viscosity.

This product, when diluted in glycerin, gives good results: smooth, well-set gels. The only drawback is a musty, old-sock smell after a few days of opening, which disappears after use in the recipe.
