Hot or cold dispersion in the aqueous phase.

Utensil : Hand whisk or electric mixer

1. Sprinkle the guar gum into the cold or preheated aqueous phase, stirring simultaneously to avoid lumps.

2. Shake vigorously to homogenize the mixture.

3. Leave to swell for a few minutes, stirring occasionally.

4. The gum will dissolve more quickly when heated than when cold. Heating will also help dissolve any lumps and can therefore be used to "fix" a lumpy gel.

5. Without preservatives, the gel will only keep for a few days in the refrigerator.

Composition

It consists mainly of a galactomannan, known as guarane, which is produced by combining two sugars: mannose and galactose.

Store at room temperature away from moisture and light.
